Ingredients

  • 2 cups butternut squash, peeled and cubed
  • 2 tablespoons olive oil
  • 1 teaspoon dried thyme
  • Salt and black pepper to taste
  • 1 cup orzo pasta
  • 2 cups chicken or vegetable broth
  • 1/2 cup heavy cream
  • 1/3 cup grated parmesan cheese
  • 2 cups fresh spinach
  • 2 cloves garlic, minced
  • 1 small onion, finely chopped
  • 1 tablespoon butter

Instructions

  1. Preheat oven to 200°C (400°F).
  2. Toss butternut squash with olive oil, thyme, salt, and pepper, then spread on a baking sheet.
  3. Roast for about 25 minutes until tender and lightly caramelized.
  4. In a skillet, melt butter over medium heat and sauté onion for 4–5 minutes until soft.
  5. Add garlic and cook for 1 minute until fragrant.
  6. Stir in orzo and toast lightly for 1–2 minutes.
  7. Add broth and simmer, stirring occasionally, until orzo is tender and liquid mostly absorbed (about 10 minutes).
  8. Lower heat and stir in heavy cream and parmesan until smooth.
  9. Add spinach and cook until wilted.
  10. Fold in roasted butternut squash.
  11. Adjust seasoning and serve warm.
