Ingredients

  • 400 g farfalle pasta
  • 250 g salmon fillet, skin removed and cut into cubes
  • 1 tablespoon olive oil
  • 1 tablespoon butter
  • 2 garlic cloves, minced
  • 1/4 cup chicken broth
  • 1 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • 2 tablespoons fresh parsley, chopped
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon paprika (optional)
  • Pasta water as needed

Instructions

  1. Bring a large pot of salted water to a boil and cook the farfalle pasta until al dente according to package instructions. Reserve 1/2 cup pasta water before draining.
  2. Pat the salmon cubes dry and season lightly with salt, pepper, and paprika if using.
  3. Heat olive oil and butter in a large skillet over medium heat.
  4. Add the minced garlic and sauté for about 30 seconds until fragrant.
  5. Add the salmon cubes and cook gently for 2 to 3 minutes, turning carefully to keep the salmon tender.
  6. Pour in the chicken broth and simmer for 2 minutes until slightly reduced.
  7. Lower the heat and stir in the heavy cream. Simmer gently for 3 to 4 minutes until slightly thickened.
  8. Add the Parmesan cheese and stir until melted and smooth.
  9. If the sauce is too thick, add a splash of reserved pasta water.
  10. Add the cooked pasta to the skillet and toss until fully coated in the creamy sauce.
  11. Sprinkle with fresh parsley and extra Parmesan cheese before serving.
  12. Serve immediately while warm and creamy.
