Ingredients

  • 2 cups heavy cream
  • 1 vanilla bean or 2 teaspoons vanilla extract
  • 5 large egg yolks
  • 1/2 cup granulated sugar (plus extra for topping)
  • Pinch of salt

Instructions

  1. Preheat oven to 325°F (160°C).
  2. Heat heavy cream with vanilla bean (or extract) until gently simmering, then let steep for 10 minutes.
  3. Whisk egg yolks, sugar, and salt until pale and slightly thickened.
  4. Slowly temper eggs by whisking in warm cream gradually.
  5. Strain mixture for a smooth custard.
  6. Divide into ramekins placed in a baking dish.
  7. Add hot water to reach halfway up ramekins (water bath).
  8. Bake 40–45 minutes until edges are set and center slightly jiggles.
  9. Cool to room temperature, then refrigerate at least 2 hours.
  10. Before serving, sprinkle sugar on top and caramelize with a torch or broiler until golden and crisp.
