Ingredients

  • 2 cups whole milk
  • 1 cup heavy cream
  • 2 large egg yolks
  • 1 cup granulated sugar
  • 4 to 6 ounces unsweetened dark chocolate, finely grated
  • 1 teaspoon vanilla extract (optional)
  • Pinch of salt

Instructions

  1. In a medium saucepan, whisk together the whole milk, heavy cream, egg yolks, granulated sugar, and pinch of salt until smooth.
  2. Place the saucepan over medium heat and stir constantly with a wooden spoon or silicone spatula.
  3. Once the mixture begins to lightly simmer, continue cooking for about 15 minutes until slightly thickened and creamy.
  4. Add the finely grated dark chocolate gradually while stirring continuously until fully melted.
  5. Allow the mixture to bubble gently for a few seconds, then briefly remove it from the heat and return it several times to create a smoother texture.
  6. Stir in the vanilla extract if using.
  7. Pour the mixture through a fine mesh sieve into a clean bowl to ensure a silky consistency.
  8. Divide the chocolate cream into serving dishes, ramekins, or dessert glasses.
  9. Refrigerate for at least 3 hours, or until fully chilled and set.
  10. Serve cold with optional whipped cream, cookies, or fresh berries.

Notes

  • Use bittersweet chocolate for a richer flavor.
  • Add espresso powder or cinnamon to enhance the chocolate taste.
  • Orange zest pairs beautifully with chocolate in this dessert.
  • Fold whipped cream into the chilled mixture for a mousse-like texture.
  • Top with shaved chocolate, cocoa powder, toasted almonds, or crushed cookies.
  • Store covered in the refrigerator for up to 4 days.
  • Freezing is not recommended because the custard may separate.
  • Let the dessert sit at room temperature for 10 minutes if too firm after chilling.
