Ingredients

  • 1 kg potatoes
  • 2 eggs
  • 2 tablespoons flour
  • 1 medium onion, finely chopped
  • 1 clove garlic, minced (optional)
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • Vegetable oil for frying
  • 2 tablespoons fresh parsley, chopped

Instructions

  1. Peel and grate the potatoes using a coarse grater. Place them in a clean kitchen towel and squeeze out as much liquid as possible.
  2. Transfer the drained potatoes to a bowl. Add eggs, flour, onion, garlic (if using), salt, and pepper. Mix well until combined.
  3. Form the mixture into evenly sized patties.
  4. Heat vegetable oil in a frying pan over medium heat.
  5. Place the patties in the pan without overcrowding and cook for 3–4 minutes on each side until golden brown and crispy.
  6. Remove and place on paper towels to absorb excess oil.
  7. Sprinkle with fresh parsley and serve immediately while hot.

Notes

  • Squeezing out excess water is key for crispiness.
  • Do not overcrowd the pan to ensure even cooking.
  • Use starchy potatoes for best results.
  • Serve immediately for maximum crunch.
  • Can be baked instead of fried for a lighter version.
