  • 1 cup unsalted butter, cold and cubed

  • 2 cups whole milk
  • 4 large egg yolks
  • 1/2 cup granulated sugar (for filling)
  • 1/4 cup cornstarch
  • 1 teaspoon vanilla extract (for filling)
  • 1 tablespoon lemon zest
  • Powdered sugar for dusting

Instructions

  1. Prepare pastry cream by heating milk until warm.
  2. Whisk egg yolks, sugar, and cornstarch until smooth.
  3. Temper with warm milk, then cook until thickened.
  4. Stir in vanilla and lemon zest, then cool completely.
  5. Mix flour, sugar, baking powder, salt, and lemon zest.
  6. Rub in cold butter until crumbly, then add eggs and vanilla.
  7. Press 2/3 of dough into a greased springform pan.
  8. Spread cooled pastry cream evenly over crust.
  9. Crumble remaining dough on top.
  10. Bake at 350°F (175°C) for 40–45 minutes until golden.
  11. Cool completely and dust with powdered sugar before serving.
