Ingredients

  • 3 ripe bananas, mashed
  • 1/2 cup melted coconut oil or melted butter
  • 1 cup granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla extract

  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 teaspoon ground cinnamon
  • 1/4 cup unsweetened dark cocoa powder
  • 1 tablespoon instant espresso powder
  • 2 tablespoons hot water
  • 1/3 cup dark chocolate chips

Instructions

  1. Preheat oven to 350°F (175°C). Grease and line a 9×5-inch loaf pan with parchment paper.
  2. In a large bowl, mash bananas until mostly smooth. Mix in melted coconut oil or butter, sugar, egg, and vanilla until well combined.
  3. Add flour, baking soda, salt, and cinnamon. Stir gently until just combined; do not overmix.
  4. In a small bowl, mix cocoa powder, espresso powder, and hot water until smooth.
  5. Transfer about 1 cup of banana batter into the chocolate mixture and stir until combined. Fold in chocolate chips.
  6. Alternate spooning plain batter and chocolate batter into the loaf pan.
  7. Use a knife to gently swirl the batters to create a marble effect.
  8. Bake for 55–65 minutes, until a toothpick inserted in the center comes out with a few moist crumbs.
  9. Cool in the pan for 15 minutes, then transfer to a wire rack to cool completely before slicing.
