Ingredients

  • 2 salmon fillets (skinless, 5–6 oz each)
  • 1/2 medium pineapple, sliced
  • 2 tablespoons coconut oil or ghee
  • 2 tablespoons raw honey
  • 2 large garlic cloves, minced
  • 2 tablespoons fresh lemon juice
  • 1/4 cup fresh parsley, chopped
  • 1 small red chili or 1/2 teaspoon chili flakes
  • 1/2 teaspoon sea salt
  • 1/4 teaspoon black pepper
  • 2 sheets aluminum foil

Instructions

  1. Preheat oven to 400°F (200°C) and prepare a baking sheet.
  2. Melt coconut oil or ghee in a small saucepan and mix in honey, garlic, lemon juice, parsley, and salt.
  3. Lay foil sheets flat and arrange pineapple slices in the center of each.
  4. Place salmon fillets on top of pineapple.
  5. Spoon garlic butter mixture evenly over salmon.
  6. Season with salt, pepper, and chili flakes.
  7. Seal foil packets tightly, leaving a little space inside for steam.
  8. Bake for 12–15 minutes until salmon is opaque and flakes easily.
  9. Carefully open packets and serve immediately.
