Ingredients

  • 1 1/4 cups heavy whipping cream
  • 2 large eggs
  • 1 large egg yolk
  • 6 tablespoons granulated keto sweetener
  • 1/2 teaspoon vanilla extract
  • 1/8 teaspoon salt
  • 1/4 teaspoon ground nutmeg or cinnamon, for topping

Instructions

  1. Preheat the oven to 350°F (175°C). Place four small ramekins inside a deep baking dish.
  2. In a mixing bowl or blender, combine the heavy whipping cream, eggs, egg yolk, keto sweetener, vanilla extract, and salt. Whisk gently until fully combined.
  3. Pour the custard mixture evenly into the ramekins.
  4. Sprinkle nutmeg or cinnamon lightly over the top of each ramekin.
  5. Carefully pour hot water into the baking dish until it reaches halfway up the sides of the ramekins.
  6. Transfer the baking dish to the oven carefully.
  7. Bake for 35–45 minutes, until the centers are mostly set but still slightly jiggly.
  8. Remove the ramekins from the water bath and let cool for several minutes.
  9. Serve warm, at room temperature, or chilled.

  • A water bath helps the custard bake evenly and prevents curdling.
  • Avoid overmixing the custard mixture to maintain a silky texture.
  • For a dairy-free version, substitute heavy cream with full-fat coconut cream.
  • Store covered in the refrigerator for up to 5 days.
