Ingredients

  • 1½ pounds shrimp, peeled, deveined, and diced
  • ¼ cup mayonnaise
  • 1 small lemon, juiced and zested
  • 1 large egg
  • 2 tablespoons fresh parsley, chopped
  • 1 tablespoon fresh basil, chopped
  • 1 teaspoon Old Bay seasoning
  • ½ cup shredded mozzarella cheese
  • ¼ cup all-purpose flour (plus extra if needed)
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • 2 tablespoons vegetable oil (for frying)
  • Lemon wedges (for serving)

Instructions

  1. Pat shrimp dry and dice into small pieces.
  2. In a bowl, whisk mayonnaise, egg, lemon juice, and lemon zest.
  3. Add parsley, basil, Old Bay seasoning, salt, pepper, and mozzarella cheese.
  4. Fold in diced shrimp until evenly coated.
  5. Mix in flour until a thick, scoopable batter forms.
  6. Heat oil in a skillet over medium-high heat.
  7. Scoop batter into the pan and flatten into fritters.
  8. Cook 2–3 minutes per side until golden and shrimp is cooked through.
  9. Drain on paper towels and serve with lemon wedges.

Notes

  • Do not overcrowd the pan to keep fritters crispy.
  • Add more flour if batter is too loose.
  • Fresh or frozen shrimp both work (thaw and dry well if frozen).
  • Best served immediately while hot and crispy.
  • Air fryer or oven can be used as a lighter alternative.
