Ingredients

  • 2 cups all-purpose flour
  • 1 cup mixed dried fruits (raisins, currants, chopped dates)
  • 1/2 cup orange juice
  • 3/4 cup sugar
  • 1/2 cup vegetable oil
  • 1 cup milk
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • 1 teaspoon vanilla extract
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/4 teaspoon salt
  • 1/4 cup chopped nuts (optional)

Instructions

  1. Soak dried fruits in orange juice for at least 30 minutes.
  2. Preheat oven to 180°C (350°F) and prepare a cake pan.
  3. Mix flour, baking powder, baking soda, salt, cinnamon, and nutmeg.
  4. In another bowl, combine sugar, oil, milk, and vanilla.
  5. Add soaked fruits to wet mixture and stir.
  6. Fold dry ingredients into wet mixture gently.
  7. Add nuts if using and mix lightly.
  8. Pour batter into pan and spread evenly.
  9. Bake for 40–50 minutes until a toothpick comes out clean.
  10. Cool before slicing and serving.
