Ingredients

  • 1 cup creamy peanut butter or almond butter
  • 2 large eggs
  • 1/2 cup plain Greek yogurt
  • 1/3 cup maple syrup or honey
  • 1/3 cup unsweetened cocoa powder
  • 1/4 cup chocolate protein powder
  • 1/2 cup coconut sugar or light brown sugar
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/3 cup dark chocolate chips
  • 6 oz cream cheese, softened
  • 1/3 cup plain Greek yogurt (for cheesecake layer)
  • 1 large egg (for cheesecake layer)
  • 2 tablespoons maple syrup or honey (for cheesecake layer)
  • 1 teaspoon vanilla extract (for cheesecake layer)
  • 1 tablespoon chocolate protein powder (optional, for cheesecake layer)

Instructions

  1. Preheat oven to 350°F and line an 8-inch square pan with parchment paper.
  2. In a bowl, whisk peanut butter, eggs, Greek yogurt, maple syrup, vanilla, cocoa powder, protein powder, sugar, baking powder, and salt until smooth.
  3. Fold in chocolate chips and spread batter evenly into the pan.
  4. In another bowl, beat cream cheese until smooth, then mix in Greek yogurt, egg, maple syrup, vanilla, and optional protein powder.
  5. Pour cheesecake mixture over brownie batter and swirl gently if desired.
  6. Bake for 25-30 minutes until edges are set and center slightly jiggles.
  7. Cool completely, then refrigerate for at least 2 hours before slicing.

Notes

  • Chilling helps the cheesecake layer set and improves slicing.
  • Swap peanut butter with almond or cashew butter if preferred.
  • Replace protein powder with extra cocoa powder if needed.
  • Store in the refrigerator for up to 5 days or freeze for up to 2 months.
  • Let sit at room temperature briefly before serving for a softer texture.
