Ingredients

  • 3 large eggs
  • 1 cup Greek yogurt
  • 1/2 cup vanilla protein powder
  • 1/4 cup honey or maple syrup
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking powder
  • 1/2 teaspoon cinnamon
  • 1 cup fresh strawberries, sliced

Instructions

  1. Preheat oven to 180°C (350°F) and grease or line a baking dish.
  2. Whisk eggs in a bowl until slightly frothy.
  3. Add Greek yogurt and mix until smooth.
  4. Stir in protein powder, honey or maple syrup, vanilla extract, baking powder, and cinnamon until fully combined.
  5. Fold in half of the sliced strawberries.
  6. Pour batter into prepared dish and spread evenly.
  7. Top with remaining strawberry slices.
  8. Bake for 25–30 minutes until set and a toothpick comes out clean.
  9. Cool for 10 minutes before slicing and serving.

Notes

  • Use high-quality protein powder for best texture and flavor.
  • Do not overbake to keep the cake moist.
  • Frozen strawberries should be thawed and drained before use.
  • Can be made dairy-free with coconut yogurt.
