Ingredients

  • 1 pound lean ground beef
  • 1 teaspoon garlic salt
  • 2 cans (10.5 ounces each) beef consommé
  • 2 cans (10.5 ounces each) French onion soup
  • 3/4 cup water
  • 2 cups uncooked long-grain white rice
  • 3/4 cup butter, sliced
  • Cooking spray for the baking dish

Instructions

  1. Preheat the oven to 425°F (220°C). Lightly grease a 9×13-inch baking dish with cooking spray.
  2. Heat a large skillet over medium heat. Add the ground beef and garlic salt. Cook until fully browned, breaking the meat apart as it cooks. Drain excess grease.
  3. Add the uncooked rice to the prepared baking dish.
  4. Spread the cooked ground beef evenly over the rice.
  5. Pour the beef consommé, French onion soup, and water into the dish.
  6. Stir gently until all ingredients are evenly combined.
  7. Arrange the sliced butter evenly across the top of the casserole.
  8. Cover the baking dish tightly with aluminum foil.
  9. Bake for 30 minutes.
  10. Remove the foil and continue baking uncovered for another 30 minutes until the rice is tender and the top is golden brown.
  11. Let the casserole rest for 5 minutes before serving.

Notes

  • Add shredded Swiss, mozzarella, provolone, or Gruyère cheese during the last 10 minutes of baking for a cheesy version.
  • Frozen peas, mushrooms, or green beans make great vegetable additions.
  • Keep the casserole tightly covered during the first bake so the rice cooks evenly.
  • Add a splash of broth when reheating if the rice becomes dry.
  • This casserole freezes very well for meal prep.
