Ingredients

  • 2 sheets puff pastry, thawed but still cold
  • 2 cups granulated sugar
  • 1 tablespoon all-purpose flour for dusting
  • 1 teaspoon ground cinnamon (optional)
  • 1 egg, beaten (optional for extra golden color)

Instructions

  1. Preheat the oven to 400°F (200°C) and line two baking sheets with parchment paper.
  2. Lightly dust a work surface with flour and unfold one sheet of puff pastry.
  3. Sprinkle about 1/2 cup of sugar evenly over the pastry. If using cinnamon, mix it into the sugar first.
  4. Lightly roll the sugar into the pastry using a rolling pin.
  5. Fold both long sides of the pastry inward until they meet in the center.
  6. Sprinkle additional sugar over the folded pastry.
  7. Fold both sides inward again so they meet in the center once more.
  8. Fold one side over the other like closing a book to create a compact log.
  9. Repeat the process with the second puff pastry sheet.
  10. Chill the pastry logs in the refrigerator for 10 to 15 minutes.
  11. Slice the chilled logs into pieces about 3/8-inch thick.
  12. Arrange the slices flat on the prepared baking sheets, leaving space between each piece.
  13. Brush lightly with beaten egg if desired.
  14. Bake for 15 to 18 minutes, flipping halfway through for even caramelization.
  15. Remove from the oven once golden brown and crisp. Cool completely before serving.

Notes

  • Keep the puff pastry cold for the best flaky texture.
  • Chilling before slicing helps maintain the signature shape.
  • Flip halfway through baking for even caramelization.
  • Store in an airtight container for up to 3 days.
  • Reheat briefly in the oven to restore crispness.
