Ingredients

  • 1 cup shrimp, peeled and deveined
  • 1/2 cup roasted potatoes, cut into bite-sized pieces
  • 1/2 cup pumpkin or squash slices
  • 1/2 cup asparagus, trimmed and cut into small pieces
  • 5–6 cherry tomatoes, halved
  • 1 tablespoon butter
  • 2 cloves garlic, minced
  • 1 teaspoon olive oil
  • 1/4 teaspoon salt, or to taste
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon paprika
  • 1 small sprig fresh rosemary (optional)

Instructions

  1. Heat the olive oil and butter in a large pan over medium heat.
  2. Add the minced garlic and sauté for about 30 seconds until fragrant.
  3. Add the shrimp and cook for 2-3 minutes, turning once, until pink and opaque. Remove and set aside.
  4. In the same pan, add roasted potatoes, pumpkin or squash, and asparagus. Cook for 6-8 minutes, stirring occasionally, until tender and lightly golden.
  5. Add cherry tomatoes and cook for 1-2 minutes until slightly softened.
  6. Return shrimp to the pan and season with salt, black pepper, and paprika.
  7. Stir gently to coat everything in the garlic butter.
  8. Garnish with fresh rosemary if using and serve warm.

Notes

  • Substitute vegetables like zucchini, bell peppers, carrots, or green beans as desired.
  • Use butternut squash or sweet potato instead of pumpkin for a sweeter flavor.
  • Add cooked rice, quinoa, or couscous to make it more filling.
  • A squeeze of lemon juice adds brightness before serving.
  • Store leftovers in an airtight container for up to 2 days.
  • Reheat gently to avoid overcooking the shrimp.
