Ingredients

  • 4 eggs
  • 1/2 cup sugar
  • 1/2 cup flour
  • 1/2 cup butter
  • 1 cup strong coffee
  • 200 g dark chocolate
  • 1 cup buttercream

Instructions

  1. Preheat oven to 180°C (350°F) and line a baking tray with parchment paper.
  2. Whisk eggs and sugar until pale and fluffy, then gently fold in flour.
  3. Spread batter evenly and bake for 8–10 minutes until lightly golden. Cool and cut into layers.
  4. Prepare strong coffee and let it cool.
  5. Melt dark chocolate with half the butter to make ganache, then let it thicken slightly.
  6. Place one sponge layer, brush with coffee, spread buttercream, then a layer of ganache.
  7. Repeat layering process, finishing with a sponge layer on top.
  8. Melt remaining chocolate and butter, then pour over the top to create a smooth glaze.
  9. Refrigerate for at least 2 hours before slicing and serving.
