Ingredients

  • 2 lbs boneless skinless chicken thighs or breasts, cut into strips
  • 3 tablespoons olive oil
  • 2 tablespoons lemon juice
  • 4 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 1 teaspoon paprika
  • 1/2 teaspoon cumin
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 4 pita breads, warmed and cut
  • 1 cucumber, sliced
  • 1 cup cherry tomatoes
  • 1/2 red onion, thinly sliced
  • 1 cup olives (Kalamata or green)
  • 1 cup shredded lettuce
  • Fresh parsley, chopped
  • Fresh dill, chopped
  • 1 cup feta cheese, crumbled
  • 1/2 cup Greek yogurt
  • 2 tablespoons olive oil (for dip)
  • 1 tablespoon lemon juice (for dip)
  • 1 clove garlic (for dip)
  • 1 tablespoon fresh dill (for dip)
  • Black pepper to taste

Instructions

  1. Whisk olive oil, lemon juice, garlic, oregano, paprika, cumin, salt, and pepper to make marinade.
  2. Add chicken strips, coat well, and marinate for at least 30 minutes (up to 4 hours).
  3. Cook chicken in a grill pan or skillet over medium-high heat for 8–10 minutes until fully cooked and lightly charred.
  4. Blend feta cheese, Greek yogurt, olive oil, lemon juice, garlic, dill, and pepper until smooth to make the dip.
  5. Arrange cooked chicken in the center of a serving board.
  6. Surround with pita bread, cucumber, tomatoes, onion, olives, and lettuce.
  7. Place feta dip in a bowl on the board.
  8. Garnish with parsley and dill, then serve immediately.
