Ingredients

  • 500g zucchini, grated
  • 1 teaspoon salt
  • 2 green onions, finely sliced
  • 1 garlic clove, minced
  • 1/2 cup feta cheese, crumbled
  • 1/4 cup parmesan cheese, grated
  • 1/2 cup breadcrumbs
  • 1 large egg
  • 2 tablespoons fresh dill, chopped
  • 2 tablespoons fresh parsley, chopped
  • 1/2 teaspoon black pepper
  • 2 tablespoons olive oil
  • 1/2 cup Greek yogurt (dip)
  • 1 tablespoon lemon juice (dip)

Instructions

  1. Grate zucchini, sprinkle with salt, and let sit for 10 minutes to release moisture.
  2. Squeeze zucchini tightly in a towel to remove excess water.
  3. Place zucchini in a bowl and mix with green onions, garlic, feta, parmesan, breadcrumbs, egg, dill, parsley, and black pepper.
  4. Form mixture into small tots or patties.
  5. Heat olive oil in a skillet over medium heat.
  6. Cook tots for 3–4 minutes per side until golden and crispy.
  7. Mix Greek yogurt and lemon juice to make the dipping sauce.
  8. Serve tots warm with yogurt dip.

Notes

  • Squeeze zucchini very well to avoid soggy tots.
  • Add extra breadcrumbs if mixture is too wet.
  • Do not overcrowd the pan when frying.
  • Serve immediately for best crisp texture.
  • Baking or air frying can be used as alternatives.
