Ingredients

  • 7 medium Yukon gold potatoes, peeled and diced
  • 1/2 cup macaroni noodles
  • 3 hard-boiled eggs, chopped
  • 1 large carrot, shredded
  • 2 celery stalks, diced
  • 1/2 English cucumber, diced
  • 1/2 yellow onion, chopped
  • 3 green onions, sliced
  • 1 cup frozen peas
  • 1/2 cup mayonnaise

Instructions

  1. Boil macaroni until al dente, then drain and cool.
  2. Boil eggs for 11 minutes, cool, peel, and chop.
  3. Boil potatoes until fork tender, then add peas during the last minute of cooking. Drain and cool completely.
  4. Prepare vegetables by chopping celery, cucumber, onion, carrot, and green onions.
  5. Whisk mayonnaise, Dijon mustard, sugar, sesame oil, rice vinegar, salt, and pepper until smooth.
  6. Combine potatoes, macaroni, eggs, peas, and vegetables in a large bowl.
  7. Pour dressing over mixture and gently stir until evenly coated.
  8. Chill for at least 30 minutes before serving.
