Ingredients

  • 2 cups rolled oats
  • 1/2 cup unsweetened cocoa powder
  • 2 ripe bananas, mashed
  • 2 large eggs
  • 1/2 cup milk
  • 1/4 cup honey or maple syrup
  • 1 teaspoon baking powder
  • 1 teaspoon vanilla extract
  • 1/2 cup chopped walnuts
  • 1/3 cup dark chocolate chips (optional)
  • Pinch of salt
  • 1 teaspoon cinnamon (optional)
  • 1 teaspoon espresso powder (optional)
  • 2 tablespoons peanut butter swirl (optional)
  • 1 tablespoon chia seeds (optional)

Instructions

  1. Preheat the oven to 350°F (175°C). Grease an 8-inch baking pan or line it with parchment paper.
  2. Add the rolled oats to a blender or food processor and blend until they resemble coarse flour.
  3. In a large bowl, mash the bananas until smooth.
  4. Add the eggs, milk, honey or maple syrup, and vanilla extract. Whisk until creamy and combined.
  5. Stir in the blended oats, cocoa powder, baking powder, and salt until a thick batter forms.
  6. Fold in the chopped walnuts and chocolate chips if using.
  7. Pour the batter into the prepared pan and spread evenly.
  8. Bake for 25 to 30 minutes, or until the center is just set.
  9. Allow the cake to cool for at least 15 minutes before slicing.
  10. Serve warm or chilled with coffee, milk, or fresh berries if desired.
