Ingredients

  • 1 cup whole wheat flour
  • 1/2 cup oat flour
  • 1/2 cup plain yogurt
  • 1/3 cup honey or maple syrup
  • 2 large eggs
  • 1/4 cup olive oil
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon salt
  • 1/2 cup milk
  • 1/2 cup chopped dates or raisins

Instructions

  1. Preheat oven to 180°C (350°F) and prepare a cake pan.
  2. Whisk eggs, yogurt, honey, olive oil, and vanilla until smooth.
  3. Mix whole wheat flour, oat flour, baking powder, baking soda, cinnamon, and salt in another bowl.
  4. Gradually combine dry ingredients with wet mixture.
  5. Add milk and mix until smooth without overmixing.
  6. Fold in dates or raisins.
  7. Pour batter into pan and smooth the top.
  8. Bake for 30–35 minutes until a toothpick comes out clean.
  9. Cool for 10 minutes, then transfer to a rack to cool completely.
