Ingredients

  • 1 cup plain Greek yogurt
  • 1/2 cup natural peanut butter (creamy, well stirred)
  • 1/4 cup dark chocolate chips
  • 1–2 tablespoons honey or maple syrup (optional)
  • 1 teaspoon vanilla extract (optional)
  • Pinch of salt (optional)

Instructions

  1. Line a muffin tin with 6 paper liners or use a silicone mold.
  2. In a bowl, mix Greek yogurt, peanut butter, honey or maple syrup (if using), vanilla extract, and salt until smooth.
  3. Spoon the mixture evenly into the muffin liners and smooth the tops.
  4. Melt the dark chocolate chips in the microwave in 20-second intervals, stirring until smooth.
  5. Spoon a thin layer of melted chocolate over each cup and spread evenly.
  6. Freeze for at least 2 hours until firm.
  7. Remove from liners and let sit for 2–3 minutes before eating for a creamier texture.

Notes

  • Use full-fat Greek yogurt for a creamier texture.
  • Natural peanut butter works best; stir well before using.
  • Add crushed peanuts or mini chocolate chips for extra texture.
  • Let cups sit briefly before eating to soften slightly.
  • Use silicone molds for easier removal.
