  • 1 cup cucumber, diced
  • 1/4 cup red onion, thinly sliced
  • 2 tablespoons fresh parsley, chopped
  • 2 tablespoons fresh lemon juice
  • 1 tablespoon olive oil
  • 1/2 teaspoon cumin powder
  • 1/4 teaspoon black pepper

  6. In a small bowl, whisk together the lemon juice, olive oil, cumin powder, salt, and black pepper.
  7. Pour the dressing over the salad ingredients.
  8. Toss gently until everything is evenly coated.
  9. Let the salad rest for 5 to 10 minutes so the flavors blend together.

  • Feta cheese or avocado adds extra richness and flavor.
  • Use purple cabbage for a colorful variation.
  • Fresh herbs like dill, mint, or cilantro work well in this recipe.
  • Store in the refrigerator for up to 3 days.
  • Keep the dressing separate until serving for maximum crunch.
