Ingredients

  • 6 large sea scallops
  • 2 tablespoons unsalted butter
  • 1 small shallot, finely chopped
  • 1 garlic clove, minced
  • 1/2 cup mushrooms, finely sliced
  • 1 tablespoon all-purpose flour
  • 1/2 cup heavy cream
  • 1/4 cup milk
  • 1/4 cup grated Gruyère cheese
  • 2 tablespoons breadcrumbs
  • 1 tablespoon chopped fresh parsley
  • 1 tablespoon olive oil
  • 1 tablespoon lemon juice
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • Pinch of nutmeg

Instructions

  1. Preheat the oven to 400°F (200°C) and lightly grease small gratin dishes or scallop shells.
  2. Pat the scallops dry and season lightly with salt and black pepper.
  3. Heat olive oil and 1 tablespoon butter in a skillet over medium heat. Sear scallops for about 1 minute per side until lightly golden, then remove and set aside.
  4. In the same skillet, melt the remaining butter and cook the shallot, garlic, and mushrooms for 3–4 minutes until softened.
  5. Stir in the flour and cook for 1 minute while stirring constantly.
  6. Slowly whisk in the milk and heavy cream until smooth. Add nutmeg and lemon juice and simmer for 2–3 minutes until slightly thickened.
  7. Return the scallops to the sauce and gently coat them.
  8. Spoon the mixture into the prepared dishes or shells.
  9. Combine breadcrumbs, Gruyère cheese, and parsley in a small bowl and sprinkle evenly over the top.
  10. Bake for 10–12 minutes until bubbly and golden brown.
  11. Serve immediately while hot and creamy.

Notes

  • Use fresh sea scallops for the best flavor and texture.
  • Do not overcook the scallops or they may become rubbery.
  • Add shrimp or crab meat for an extra seafood variation.
  • Gruyère cheese gives the most traditional flavor, but Parmesan also works well.
  • Store leftovers in the refrigerator for up to 2 days.
