Ingredients

  • 1 whole chicken, cut into pieces (or 8 chicken thighs)
  • 1/2 cup all-purpose flour
  • 2 tbsp olive oil
  • 1 large onion, chopped
  • 3 garlic cloves, minced
  • 1 red bell pepper, sliced
  • 1 green bell pepper, sliced
  • 1 cup mushrooms, sliced
  • 1 cup chicken broth
  • 28 oz crushed tomatoes
  • 1 tsp dried oregano
  • 2 sprigs rosemary
  • 2 sprigs thyme
  • 2 bay leaves
  • 1/2 cup olives
  • Salt and black pepper to taste
  • 2 tbsp fresh parsley

Instructions

  1. Season chicken with salt and pepper, then dredge lightly in flour.
  2. Brown chicken in olive oil until golden on all sides, then set aside.
  3. Sauté onion and garlic until fragrant.
  4. Add bell peppers and mushrooms and cook until softened.
  5. Pour in chicken broth and scrape the pan to release flavor.
  6. Add crushed tomatoes, herbs, and bay leaves, then stir well.
  7. Return chicken to the pot and simmer covered for about 1 hour until tender.
  8. Add olives and simmer uncovered for 10 minutes.
  9. Remove herbs and garnish with parsley before serving.
