Ingredients

  • 1 pound ricotta ravioli
  • 2 tablespoons olive oil
  • 3 cups cherry tomatoes
  • 3 garlic cloves, minced
  • 1 teaspoon lemon zest
  • 1 tablespoon fresh lemon juice
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/4 teaspoon crushed red pepper flakes
  • 1/3 cup grated Parmesan cheese
  • 8 ounces burrata cheese
  • 1/4 cup fresh basil leaves, torn
  • 2 tablespoons unsalted butter
  • 2 tablespoons chopped fresh parsley

Instructions

  1. Bring a large pot of salted water to a boil and cook the ricotta ravioli according to package instructions until tender.
  2. Reserve 1/2 cup of pasta water before draining the ravioli.
  3. While the ravioli cooks, heat olive oil in a large skillet over medium heat.
  4. Add the cherry tomatoes and cook for 6 to 8 minutes until softened and bursting.
  5. Stir in the minced garlic and crushed red pepper flakes and cook for 1 minute until fragrant.
  6. Add the lemon zest, lemon juice, salt, and black pepper.
  7. Lower the heat and stir in the butter until melted.
  8. Add a few tablespoons of reserved pasta water to create a light sauce.
  9. Add the cooked ravioli to the skillet and gently toss to coat with the sauce.
  10. Sprinkle Parmesan cheese over the ravioli and stir carefully.
  11. Transfer to serving bowls and top with torn burrata cheese.
  12. Finish with fresh basil and parsley before serving immediately.

Notes

  • Fresh burrata is best added just before serving for the creamiest texture.
  • Handle ravioli gently to prevent tearing during mixing.
  • Frozen ravioli can be used by cooking according to package instructions.
  • Add extra pasta water if the sauce becomes too thick.
  • Fresh basil and lemon zest brighten the richness of the cheese beautifully.
