Ingredients

  • 4 cups all-purpose flour

  • 1 cup powdered sugar (split between fillings)
  • 1 cup warm milk (split between fillings)
  • Raisins (as needed)
  • Cinnamon (walnut filling)
  • Apricot jam (walnut filling)
  • Lemon zest (poppy seed filling)
  • 1 whole egg (for egg wash)

Instructions

  1. Activate yeast in warm milk and let it foam.
  2. Mix flour, sugar, salt, and butter until crumbly.
  3. Add egg yolks, vanilla, lemon zest, and yeast mixture; knead into smooth dough.
  4. Rest dough for 30 minutes.
  5. Prepare walnut filling by heating milk and sugar, then mixing in walnuts, raisins, cinnamon, and jam.
  6. Prepare poppy seed filling similarly with milk, sugar, poppy seeds, raisins, and lemon zest.
  7. Divide dough into two parts and roll into rectangles.
  8. Spread walnut filling on one and poppy seed filling on the other.
  9. Roll tightly into logs and place seam-side down on a baking tray.
  10. Brush with egg wash, prick lightly, and bake at 350°F (180°C) for 30–35 minutes.
