Ingredients

  • 1 large head green cabbage (1.2 to 1.5 kg)
  • 500 g ground beef or ground lamb
  • 100 g uncooked white rice, rinsed
  • 1 medium onion, finely chopped
  • 2 garlic cloves, minced
  • 1 large egg (optional)
  • 2 teaspoons sweet Hungarian paprika
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon caraway seeds (optional)
  • 1 bay leaf
  • 2 tablespoons vegetable oil
  • 1.2 liters beef broth or water
  • 200 g halal smoked beef sausage, sliced (optional)
  • 200 g sour cream (optional, for serving)

Instructions

  1. Bring a large pot of water to a boil and blanch the cabbage for 5 to 8 minutes, loosening the leaves as they soften. Remove and trim thick veins.
  2. In a bowl, mix ground meat, rice, onion, garlic, egg if using, paprika, salt, and pepper until well combined.
  3. Place filling on each cabbage leaf, fold in sides, and roll tightly.
  4. Chop leftover cabbage and place at the bottom of a large pot.
  5. Arrange cabbage rolls seam-side down in layers and add sliced sausage if using.
  6. Add bay leaf and caraway seeds, then pour in broth to cover the rolls.
  7. Cover and simmer on low heat for 1.5 to 2 hours until cabbage is tender and filling is cooked.
  8. Serve hot with sour cream if desired.

  • Use a mix of beef and lamb for richer flavor.
  • Add tomato paste or sauce for a deeper broth.
  • Substitute with ground chicken or turkey for a lighter version.
  • Pickled cabbage leaves can be used for a tangy flavor.
