Ingredients

  • 4 large egg whites
  • 50 g granulated sugar (for meringue)
  • 1 pinch salt
  • 4 large egg yolks
  • 500 ml whole milk
  • 50 g granulated sugar (for custard)
  • 1 teaspoon vanilla extract
  • 4 tablespoons caramel sauce

Instructions

  1. Whisk egg whites with a pinch of salt until foamy.
  2. Gradually add 50 g sugar and beat until stiff, glossy peaks form.
  3. Heat milk in a saucepan over low heat until hot but not boiling.
  4. Spoon meringue into the warm milk and poach for about 1 minute per side, then remove and set aside.
  5. Whisk egg yolks with 50 g sugar until pale and creamy.
  6. Slowly add warm milk while whisking to temper the mixture.
  7. Return mixture to saucepan and cook gently, stirring constantly until slightly thickened (do not boil).
  8. Remove from heat and stir in vanilla extract.
  9. Pour custard into serving dishes and let cool.
  10. Place poached meringue on top and drizzle with caramel sauce before serving.
