Ingredients

  • 4 cups all-purpose flour

Instructions

  1. Preheat the oven to 350°F (175°C) and line two baking sheets with parchment paper.
  2. In a medium bowl, whisk together the flour, baking powder, and salt.
  3. In a large bowl, beat the softened butter and granulated sugar until light and fluffy, about 3 to 4 minutes.
  4. Add the eggs one at a time, mixing well after each addition, then stir in the vanilla extract.
  5. Gradually add the dry ingredients alternating with the milk until a smooth, soft dough forms.
  6. Roll small portions of dough into 1-inch balls and place them on the prepared baking sheets.
  7. Bake for 12 to 15 minutes until the bottoms are lightly golden while the tops remain pale.
  8. Allow the cookies to cool completely on a wire rack.
  9. Use a small knife or spoon to gently hollow out the flat side of each cookie half.
  10. To prepare the filling, beat mascarpone cheese, heavy cream, powdered sugar, vanilla extract, and peach jam until smooth and fluffy.
  11. Fill one cookie half with the cream mixture and sandwich it with another cookie half.
  12. In two small bowls, prepare decorating liquids by mixing peach juice with yellow food coloring in one bowl and red food coloring in the other.
  13. Lightly brush or dip each cookie in the yellow mixture, then add touches of red for a peach-like appearance.
  14. Roll the decorated cookies in granulated sugar while slightly damp.
  15. Allow the cookies to rest for 20 minutes before serving. Garnish with mint leaves if desired.
