Ingredients

  • 4 medium zucchinis, sliced thinly lengthwise
  • 1 cup ricotta cheese
  • 1/2 pound Italian sausage, cooked and crumbled
  • 1 cup fresh spinach, chopped
  • 1/2 cup shiitake mushrooms, chopped
  • 1 cup mozzarella cheese, shredded
  • 1/4 cup Parmesan cheese, grated
  • 1 can (28 ounces) crushed San Marzano tomatoes
  • 2 cloves garlic, minced
  • 1 tablespoon olive oil
  • 1 teaspoon dried oregano
  • Salt and pepper to taste
  • Fresh basil or parsley for garnish

Instructions

  1. Preheat oven to 375°F (190°C).
  2. Slice zucchinis lengthwise into thin strips.
  3. In a bowl, mix ricotta, cooked sausage, spinach, and mushrooms. Season with salt and pepper.
  4. Heat olive oil in a saucepan, sauté garlic, then add crushed tomatoes, oregano, salt, and pepper. Simmer for 10 minutes.
  5. Spread a layer of sauce in a baking dish.
  6. Place filling on each zucchini slice, roll up, and place seam-side down in the dish.
  7. Pour remaining sauce over the rolls.
  8. Top with mozzarella and Parmesan cheese.
  9. Bake for 25–30 minutes until cheese is melted and bubbly.
  10. Garnish with fresh herbs and serve.
