Ingredients

  • 4 boneless, skinless chicken breasts (6–8 ounces each)
  • 1 tablespoon olive oil
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 4 ounces cream cheese, softened
  • 1/4 cup shredded cheddar cheese
  • 1/4 cup shredded Monterey Jack cheese
  • 2 to 3 jalapeños, finely diced
  • 1/4 cup panko breadcrumbs (optional)
  • 1 tablespoon fresh parsley, chopped for garnish

Instructions

  1. Preheat the oven to 375°F (190°C) and lightly grease a baking dish or prepare an oven-safe skillet.
  2. Pat the chicken breasts dry and season both sides with salt and black pepper.
  3. In a medium bowl, mix together the cream cheese, cheddar cheese, Monterey Jack cheese, and diced jalapeños until smooth.
  4. Carefully cut a pocket into the thickest side of each chicken breast without slicing all the way through.
  5. Spoon the cheese mixture evenly into each chicken breast pocket and secure with toothpicks if needed.
  6. Heat olive oil in a large oven-safe skillet over medium-high heat.
  7. Sear the stuffed chicken breasts for 2 to 3 minutes per side until lightly golden.
  8. Sprinkle panko breadcrumbs over the tops if using.
  9. Transfer the skillet or baking dish to the oven and bake for 25 to 30 minutes until the chicken reaches an internal temperature of 165°F (74°C).
  10. Let the chicken rest for 5 minutes before serving. Garnish with chopped parsley and serve warm.

Notes

  • Remove jalapeño seeds for a milder flavor.
  • Freshly shredded cheese melts more smoothly than pre-shredded cheese.
  • Use toothpicks to help prevent filling from leaking during baking.
  • Chicken thighs can be substituted for extra juiciness.
  • Skip the panko breadcrumbs for a lower-carb version.
