Ingredients

  • 2 large chicken breasts, cut into 4 pieces
  • 4 oz cream cheese, softened
  • 1/2 cup shredded cheddar cheese
  • 1/4 cup mozzarella cheese
  • 2 jalapeños, seeded and finely chopped
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 cup breadcrumbs
  • 1 egg, beaten
  • Cooking spray or oil for greasing

Instructions

  1. Preheat oven to 375°F (190°C) and prepare a greased or lined baking sheet.
  2. In a bowl, mix cream cheese, cheddar, mozzarella, jalapeños, garlic powder, onion powder, salt, and pepper until smooth.
  3. Flatten each piece of chicken to an even thickness.
  4. Place filling in the center, fold chicken around it, and shape into sealed balls.
  5. Dip each piece into beaten egg, then coat with breadcrumbs.
  6. Arrange on baking sheet and lightly spray or brush with oil.
  7. Bake for 25–30 minutes until golden and fully cooked.
  8. Cool slightly before serving.
