Ingredients

  • 2 pounds starchy potatoes, such as Russet potatoes
  • 1/2 cup potato starch
  • 1 large egg
  • 1 teaspoon salt
  • Extra salt for boiling water

Instructions

  1. Wash the potatoes thoroughly and place them in a large pot. Cover with water and add a generous pinch of salt.
  2. Bring the water to a boil and cook the potatoes for 20 to 25 minutes until fork tender.
  3. Drain the potatoes and let them cool slightly. Peel while still warm.
  4. Pass the potatoes through a potato ricer or mash until completely smooth.
  5. Transfer the mashed potatoes to a large bowl and add potato starch, egg, and salt.
  6. Mix gently until a soft dough forms, being careful not to overmix.
  7. Divide the dough into equal portions and shape into round dumplings about 2 inches wide.
  8. Bring a large pot of salted water to a gentle simmer.
  9. Carefully lower the dumplings into the simmering water.
  10. Cook for 10 to 15 minutes until the dumplings float to the surface.
  11. Remove with a slotted spoon and serve warm with gravy, butter, or your favorite main dish.

Notes

  • Use starchy potatoes like Russets for the lightest texture.
  • Avoid boiling the dumplings aggressively to prevent them from falling apart.
  • Toasted bread cubes can be added inside for a traditional variation.
  • Fresh herbs such as parsley or chives add extra flavor.
  • Uncooked dumplings freeze well for up to 2 months.
  • Leftover dumplings can be sliced and pan-fried in butter until crispy.
  • This recipe is naturally gluten-free when using pure potato starch.
