Ingredients
2 cups almond flour
1/4 cup coconut flour
1 teaspoon baking powder
1/4 teaspoon salt
200 g cream cheese, softened
1/2 cup unsalted butter, softened
3/4 cup erythritol or preferred keto sweetener
4 large eggs
1 tablespoon lemon zest
1/4 cup fresh lemon juice
1 teaspoon vanilla extract
1/2 cup powdered erythritol (optional glaze)
2 tablespoons lemon juice (optional glaze)
Instructions
Preheat oven to 170°C (340°F) and grease a loaf pan, lining it with parchment paper.
In a bowl, whisk together almond flour, coconut flour, baking powder, and salt.
In another bowl, beat cream cheese and butter until smooth and creamy. Add sweetener and mix until light and fluffy.
Add eggs one at a time, mixing well after each addition. Stir in lemon zest, lemon juice, and vanilla extract.
Gradually fold dry ingredients into the wet mixture until a smooth batter forms.
Pour batter into the prepared loaf pan and smooth the top.
Bake for 50-60 minutes, until a toothpick inserted in the center comes out clean.
Cool completely in the pan before removing.
If using glaze, mix powdered erythritol with lemon juice and drizzle over cooled cake.
Notes
Use fresh lemon juice for the best flavor.
Do not skip coconut flour as it helps absorb moisture.
Store in the refrigerator for up to 5 days or freeze slices for up to 2 months.
Let cake come to room temperature before serving for best texture.
