Ingredients
4 medium zucchini
1 tablespoon olive oil
1 small onion, finely chopped
2 cloves garlic, minced
200 grams mushrooms, finely chopped
2 cups fresh spinach, chopped
1 cup ricotta cheese
1/2 cup shredded mozzarella cheese
1/4 cup grated parmesan cheese
1 teaspoon dried oregano
1/2 teaspoon salt
1/2 teaspoon black pepper
1/4 teaspoon chili flakes (optional)
Instructions
Preheat oven to 180°C (350°F) and prepare a baking tray.
Slice zucchini in half lengthwise and scoop out the center to form boats. Set flesh aside.
Heat olive oil in a pan and sauté onion for 2–3 minutes until soft.
Add garlic and cook briefly until fragrant.
Add mushrooms and cook until tender and moisture evaporates.
Add spinach and reserved zucchini flesh, cooking until wilted and excess liquid is gone. Season with salt, pepper, oregano, and chili flakes.
Remove from heat and let cool slightly, then mix with ricotta, half mozzarella, and half parmesan.
Fill each zucchini boat with the mixture and place on baking tray.
Top with remaining mozzarella and parmesan cheese.
Bake for 20–25 minutes until zucchini is tender and cheese is golden.
Let cool slightly before serving.
Notes
Drain excess moisture from vegetables to avoid soggy filling.
