Ingredients

  • 1 large egg
  • 1/2 cup chopped pecans
  • 1/4 cup unsalted butter
  • 1/3 cup brown sugar substitute
  • 2 tablespoons heavy cream
  • 1/2 teaspoon vanilla extract
  • Pinch of salt

Instructions

  1. Preheat oven to 175°C (350°F) and line a baking sheet.
  2. Mix almond flour, coconut flour, sweetener, salt, and baking powder.
  3. Add melted butter, vanilla, and egg; mix into a soft dough.
  4. Roll dough into balls, place on tray, and press centers to form wells.
  5. Bake for 8–10 minutes until edges are golden.
  6. Prepare filling by melting butter, sweetener, and cream until smooth.
  7. Stir in vanilla, salt, and pecans.
  8. Spoon filling into cookie centers.
  9. Bake again for 5–7 minutes until bubbly.
  10. Cool completely before serving.
