Ingredients

  • 2 large chicken breasts, sliced into 4 fillets
  • 1 tablespoon olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 cup low-sugar marinara sauce
  • 1 1/2 cups shredded mozzarella cheese
  • 1/4 cup grated parmesan cheese
  • 1/2 cup sliced black olives
  • 1/2 cup sliced mushrooms
  • 1/4 cup chopped green bell pepper
  • 1/4 cup sliced turkey pepperoni or halal beef pepperoni
  • 1 tablespoon chopped fresh parsley

Instructions

  1. Preheat oven to 200°C and lightly grease a baking dish.
  2. Arrange chicken fillets in the dish and drizzle with olive oil.
  3. Season with garlic powder, oregano, basil, salt, and pepper.
  4. Bake for 15 minutes.
  5. Remove from oven and spread marinara sauce over each piece.
  6. Top with mozzarella and parmesan cheese.
  7. Add olives, mushrooms, bell pepper, and pepperoni.
  8. Return to oven and bake for 10–15 minutes until cheese is melted and bubbly.
  9. Rest briefly, garnish with parsley, and serve.
