Ingredients

  • 3 medium cucumbers, peeled and sliced 1/4 inch thick
  • 1 medium onion, thinly sliced and separated into rings
  • 3 medium tomatoes, cut into wedges
  • 1/2 cup vinegar
  • 1/4 cup granulated sugar
  • 1 cup cold water
  • 2 teaspoons salt
  • 1 teaspoon fresh coarse ground black pepper
  • 1/4 cup oil
  • 1 teaspoon chopped fresh mint (optional)

Instructions

  1. Place the sliced cucumbers, onion rings, and tomato wedges into a large mixing bowl.
  2. Add the vinegar, sugar, cold water, salt, black pepper, and oil to the bowl.
  3. Sprinkle in the chopped fresh mint if using.
  4. Gently toss everything together until the vegetables are evenly coated in the marinade.
  5. Cover the bowl and refrigerate for at least 2 hours.
  6. Stir once halfway through chilling so the vegetables absorb the dressing evenly.
  7. Serve cold with extra marinade spooned over the top.

Notes

  • This salad tastes even better after several hours of chilling.
  • Use apple cider vinegar for a slightly sweeter and fruitier flavor.
  • Cherry tomatoes can be substituted for regular tomatoes.
  • Fresh dill, parsley, or basil can replace mint.
  • Store leftovers in the refrigerator and stir before serving.
