Ingredients

  • 400 g mixed pitted olives
  • 80 ml extra virgin olive oil
  • 2 tablespoons fresh parsley, chopped
  • 1 clove garlic, thinly sliced
  • 1 teaspoon chili flakes
  • 2 small fresh rosemary sprigs

Instructions

  1. Drain olives if in brine and pat dry.
  2. Place olives in a bowl or jar.
  3. Add garlic and chopped parsley.
  4. Sprinkle in chili flakes.
  5. Add rosemary sprigs, gently pressing to release aroma.
  6. Pour olive oil over olives and mix gently.
  7. Cover and refrigerate for at least 2 hours.
  8. Bring to room temperature before serving.

  • Marinate overnight for deeper flavor.
  • Add lemon zest for brightness.
  • Use mixed olives for more complexity.
  • Adjust chili flakes for spice level.
