Ingredients

  • 12 oz cream cheese, softened
  • 0.5 cup granulated sugar
  • 0.25 cup sour cream
  • 1 tsp vanilla extract
  • 0.5 cup raspberry puree, strained
  • 1.5 tsp gelatin powder (bloomed in 2 tbsp water)
  • 0.5 cup heavy cream
  • 1 tbsp powdered sugar
  • 0.5 tsp vanilla bean paste
  • 0.75 cup white chocolate chips
  • 0.25 cup heavy cream (for glaze)
  • 0.5 tsp light corn syrup
  • deep purple gel food coloring
  • fresh raspberries (optional)
  • silver sanding sugar (optional)

Instructions

  1. Whip heavy cream with powdered sugar and vanilla bean paste until stiff peaks form. Pipe into small cylinders and freeze until solid.
  2. Beat cream cheese and granulated sugar until smooth. Mix in sour cream and vanilla extract.
  3. Warm raspberry puree and dissolve bloomed gelatin in it. Cool slightly, then fold into cheesecake mixture.
  4. Fill silicone prism molds halfway with cheesecake mixture. Insert frozen cream core and cover with remaining mixture. Smooth tops.
  5. Freeze for at least 6 hours until firm.
  6. Melt white chocolate chips with heavy cream and corn syrup until smooth. Add food coloring and cool to about 92°F.
  7. Unmold frozen prisms and place on a rack. Pour glaze evenly over each prism.
  8. Let glaze set for 10 minutes, then transfer to a plate. Garnish if desired.
  9. Refrigerate for 2 hours before serving to soften slightly.

Notes

  • Ensure glaze temperature is correct to avoid melting the cheesecake.
  • Gelatin helps maintain structure; omitting it will soften texture.
  • Use silicone molds for easy unmolding.
  • Can be made ahead and stored frozen.
  • Try other fruit purees for variation.
