Ingredients

  • 2 cups all-purpose flour
  • 2 cups granulated sugar
  • 3/4 cup unsweetened cocoa powder, preferably Dutch-processed
  • 2 teaspoons baking soda
  • 1 teaspoon baking powder
  • 1 teaspoon salt
  • 1 cup buttermilk, room temperature
  • 1/2 cup vegetable oil
  • 2 large eggs, room temperature
  • 2 teaspoons vanilla extract
  • 1 cup hot brewed coffee
  • 1/2 cup unsalted butter
  • 2/3 cup unsweetened cocoa powder
  • 3 cups powdered sugar
  • 1/3 cup whole milk or heavy cream
  • 1 teaspoon vanilla extract (for frosting)
  • Pinch of flaky sea salt

Instructions

  1. Preheat the oven to 350°F (175°C). Grease and flour a 22 cm x 33 cm baking pan or two 22 cm round cake pans.
  2. In a large bowl, whisk together the flour, granulated sugar, cocoa powder, baking soda, baking powder, and salt.
  3. Add the buttermilk, vegetable oil, eggs, and vanilla extract. Beat until smooth and fully combined.
  4. Slowly pour in the hot brewed coffee while mixing on low speed. The batter will be thin.
  5. Pour the batter evenly into the prepared pan or pans.
  6. Bake for 30 to 35 minutes or until a toothpick inserted into the center comes out clean.
  7. Allow the cake to cool completely before frosting.
  8. To prepare the fudge frosting, melt the butter in a saucepan over low heat.
  9. Stir in the cocoa powder until smooth.
  10. Gradually alternate adding the powdered sugar and milk or cream, beating continuously until creamy and spreadable.
  11. Mix in the vanilla extract and flaky sea salt.
  12. Spread the frosting evenly over the cooled cake.
  13. Slice and serve at room temperature.

Notes

  • Hot coffee enhances the chocolate flavor without making the cake taste like coffee.
  • The thin batter creates an extra moist and tender texture.
  • Mini chocolate chips can be added for extra richness.
  • Use dark cocoa powder for a deeper chocolate flavor.
  • The cake works well as cupcakes or a layered cake.
  • Store tightly covered to keep the cake moist.
  • The frosting becomes extra fudgy when slightly warmed.
