Ingredients

  • 2 cups all-purpose flour
  • 1 cup white sugar
  • 1/2 cup vegetable oil
  • 1/2 cup apple sauce or natural yogurt
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 teaspoon ground cinnamon
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 3 large apples, peeled and thinly sliced
  • 2 tablespoons confectioners’ sugar for topping

Instructions

  1. Preheat the oven to 350°F (175°C). Grease and flour a 9×13-inch cake pan.
  2. In a large mixing bowl, beat together the vegetable oil, apple sauce, eggs, sugar, and vanilla extract until smooth.
  3. In a separate bowl, whisk together the flour, cinnamon, baking soda, and salt.
  4. Gradually add the dry ingredients into the wet ingredients and stir until fully combined. Avoid overmixing.
  5. Pour the batter evenly into the prepared cake pan.
  6. Arrange the sliced apples evenly over the top of the batter. Optionally fold some apples into the batter for extra moisture.
  7. Bake for about 45 minutes or until a toothpick inserted into the center comes out clean.
  8. Allow the cake to cool slightly on a wire rack.
  9. Dust generously with confectioners’ sugar before serving.
  10. Serve warm or at room temperature.

Notes

  • Firm apples like Granny Smith or Honeycrisp work best.
  • Do not overmix the batter to keep the cake tender.
  • Add chopped nuts or raisins for extra texture.
  • Store covered at room temperature for up to 3 days.
  • Freeze slices individually for up to 3 months.
