Ingredients

  • 1 kg fresh mussels, cleaned and debearded
  • 2 shallots, finely chopped
  • 150 ml dry white wine
  • 2 tablespoons unsalted butter
  • 2 cloves garlic, minced
  • 2 tablespoons fresh parsley, chopped
  • 100 ml heavy cream (optional)
  • Salt, to taste
  • Freshly ground black pepper, to taste

Instructions

  1. Rinse mussels thoroughly under cold water, scrub shells, and remove beards. Discard any mussels that remain open after tapping.
  2. Melt butter in a large pot or Dutch oven over medium heat.
  3. Add shallots and cook for 2–3 minutes until softened.
  4. Stir in garlic and cook for 30 seconds until fragrant.
  5. Pour in white wine and bring to a gentle simmer.
  6. Add mussels, cover tightly with a lid, and steam for 5–7 minutes, shaking the pot occasionally.
  7. Discard any mussels that do not open.
  8. Stir in parsley and heavy cream if using. Season lightly with salt and black pepper.
  9. Serve immediately with crusty bread or fries.

Notes

  • Use fresh mussels that smell clean and ocean-like.
  • Dry white wines like Sauvignon Blanc or Muscadet work best.
  • Add diced tomatoes or Dijon mustard for variation.
  • Do not overcook mussels or they may become rubbery.
  • Store leftovers in the refrigerator for up to 1 day.
