Ingredients
1/2 cup water
1/2 cup whole milk
1/2 cup unsalted butter
1/4 teaspoon salt
1 tablespoon granulated sugar
1 cup all-purpose flour
4 large eggs
5 large egg yolks
1/2 cup granulated sugar (for filling)
1/2 cup white grape juice or apple juice
1 cup heavy cream, whipped to soft peaks
1/4 cup powdered sugar (for garnish)
1/4 cup melted chocolate (optional)
Instructions
Preheat oven to 190°C (375°F) and line a baking sheet with parchment paper.
In a saucepan, combine water, milk, butter, salt, and sugar; bring to a boil.
Reduce heat and add flour all at once, stirring until a smooth dough forms and pulls away from the pan.
Remove from heat and cool for 5 minutes, then add eggs one at a time, mixing until smooth and glossy.
Pipe or spoon 12 mounds onto the baking sheet.
Bake for 25–30 minutes until puffed and golden; let rest in oven with door slightly open for 10 minutes, then cool completely.
For filling, whisk egg yolks and sugar until pale; place over simmering water and slowly whisk in juice.
Continue whisking about 10 minutes until thick and airy, then cool.
Fold in whipped cream gently until smooth.
Fill cooled puffs with cream, dust with powdered sugar, and drizzle chocolate if desired.
Notes
Do not open the oven early to prevent deflating.
Let shells cool completely before filling.
Filling should be fully cooled before mixing with cream.
