Ingredients

  • For the almond sponge:
  • 150 g almond flour
  • 100 g sugar
  • 4 large eggs
  • 50 g melted butter
  • For the coffee syrup:
  • 200 ml strong brewed coffee
  • 50 g sugar
  • For the coffee buttercream:
  • 100 g softened butter
  • 50 g sugar
  • 2 tablespoons strong coffee
  • For the chocolate ganache:
  • 200 g dark chocolate, chopped
  • 200 ml heavy cream
  • For the glaze:
  • 100 g dark chocolate
  • 2 tablespoons cream

Instructions

  1. Preheat oven to 180°C and line a baking tray with parchment paper.
  2. Whisk eggs and sugar until pale and fluffy. Fold in almond flour and melted butter.
  3. Spread batter evenly and bake for 10–12 minutes. Cool completely.
  4. Cut sponge into equal rectangles.
  5. Prepare syrup by mixing hot coffee with sugar and let cool.
  6. Make ganache by pouring hot cream over chocolate and stirring until smooth.
  7. Beat butter and sugar until creamy, then mix in coffee to make buttercream.
  8. Layer sponge, brush with syrup, spread buttercream, then ganache. Repeat layers.
  9. Chill for at least 3 hours.
  10. Prepare glaze by melting chocolate with cream, pour over cake, and smooth.
  11. Chill again before slicing and serving.
