  • 1/4 cup honey or light corn syrup

  • 1 1/4 cups raw pecan halves, coarsely chopped

  • 2 large eggs, room temperature
  • 1 1/2 cups all-purpose flour
  • 1 1/2 tsp baking powder
  • 1/2 tsp baking soda
  • 3/4 cup granulated sugar
  • 1/2 cup neutral oil
  • 1/4 cup water
  • 1 tsp vanilla extract
  • 1/4 cup brown sugar (for batter)
  • 1/2 tsp kosher salt
  • 2 tsp ground cinnamon
  • Optional: flaky salt

Instructions

  1. Preheat oven to 175°C (350°F) and grease a 9-inch round cake pan.
  2. In a saucepan, melt butter and stir in brown sugar, honey, and salt until smooth and bubbling.
  3. Pour caramel mixture into pan and spread evenly, then sprinkle pecans on top.
  4. In a bowl, whisk flour, baking powder, baking soda, salt, and cinnamon.
  5. In another bowl, mix sugars, oil, eggs, sour cream, water, and vanilla until smooth.
  6. Gradually combine dry ingredients into wet mixture until just incorporated.
  7. Pour batter over pecan layer and smooth the top.
  8. Bake for 35–40 minutes until a toothpick inserted comes out clean.
  9. Cool for 10 minutes, then invert onto a serving plate while warm.
