Ingredients

  • 1 1/2 pounds ground beef
  • 1 medium onion, finely chopped
  • 1 green bell pepper, finely chopped
  • 2 garlic cloves, minced
  • 1 cup breadcrumbs
  • 1/2 cup whole milk
  • 2 large eggs
  • 1/4 cup Worcestershire sauce
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 cup shredded provolone cheese
  • 1 cup sliced mushrooms
  • 1/2 cup sliced green onions
  • 1/2 cup sliced roasted red peppers

Instructions

  1. Preheat oven to 350°F (175°C) and grease or line a loaf pan.
  2. Mix ground beef, onion, bell pepper, garlic, breadcrumbs, milk, eggs, Worcestershire sauce, salt, and pepper.
  3. Press half the meat mixture into the pan.
  4. Layer with half the provolone cheese, mushrooms, green onions, and roasted peppers.
  5. Add remaining meat mixture and seal edges.
  6. Bake for 60 minutes or until internal temperature reaches 160°F (71°C).
  7. Top with remaining provolone cheese and bake 5 more minutes until melted.
  8. Rest for 10 minutes before slicing and serving.

Notes

  • Do not overmix to keep meatloaf tender.
  • Letting it rest helps slices hold together.
  • Ground turkey can be used for a lighter version.
  • Add extra cheese or spicy peppers for variation.
  • Leftovers store well and taste even better the next day.
