Ingredients

  • 1/2 cup unsalted butter, softened
  • 1 cup all-purpose flour
  • 1/4 cup confectioners’ sugar
  • 1/4 teaspoon salt
  • 1 1/2 cups granulated sugar
  • 1/4 cup all-purpose flour
  • 4 large eggs
  • 1 cup freshly squeezed pink grapefruit juice
  • 1 tablespoon grapefruit zest
  • 2–3 drops pink food coloring (optional)
  • Extra powdered sugar for dusting

Instructions

  1. Preheat oven to 350°F (175°C) and line an 8×10-inch baking pan with parchment paper.
  2. Mix butter, flour, powdered sugar, and salt until crumbly.
  3. Press crust mixture evenly into pan and bake for 18–20 minutes until lightly golden.
  4. Whisk sugar and flour together in a bowl for the filling.
  5. Add eggs and whisk until smooth.
  6. Mix in grapefruit juice, zest, and optional food coloring.
  7. Pour filling over hot crust.
  8. Bake for 20–25 minutes until center is set.
  9. Cool at room temperature for 1 hour, then refrigerate for at least 2 hours.
  10. Slice into bars and dust with powdered sugar before serving.

Notes

  • Fresh grapefruit juice gives the best flavor and color.
  • Bars must be fully chilled before slicing for clean cuts.
  • Parchment paper makes removal easier.
  • Ruby red grapefruit creates a naturally pink color.
